The tendency for all things to deteriorate over time...and is central to the second law of thermodynamics. Entropy is symbolized by the letter S, by the way...
Entropy is a measure of the amount of disorder of a system.

In ice each water molecule is held firmly in place and the entropy is relatively low. Liquid water has a higher entropy as the water molecules have restricted movement. Water vapour has a much higher entropy as the molecules can move about freely.
