Why does the copyright of a book remain with its author, but the copyright to a music album is held by the record company? I thought all copyright remains with the artist, regardless of medium.

Technically, it does. Copyright can never be taken away from you, but you can assign the rights to it for a specified period of time. That is the trade off that most record companies, book publishers and the like usually demand for releasing your work.
