Boiled eggs

As chief cook and bottle washer in my home, I would just like to say that taking the shell off a hard boiled egg is one of my pet hates.

Does anyone know a painless and easy way to undertake this?

I always put them straight into cold water after boiling- the shells seem to come off easier :-)
ok.. i work in a resturant and i have to peel about 300 of the damn things on saturday afternoons for the sunday starters..

the best way ive found is:

have the eggs at room temp before cooking,

boil water and add the eggs, boil for about 8 minutes, this should get hem tender in the middle, if you wnat them solid then cook for 10

once boiled, put the pan in the sink, run under cold water for a while

once cool, drain out the water... then refil the pan with water from the hot tap,

dry your hands each time they get wet! this helps you not to slip and damagethe egg once the shell is coming away

tap the top and bottom of the egg and roll the middle, you should be able to find the air cap, start peeling from here, because of the way the eggs were cooled the membrane should ease away from the shell and you should be able to peel the egg without damaging it..



although this seems complicated it gives excellent presentation,
its also better to boil eggs that aren't really really fresh. We have our own chickens and fresh eggs daily and new ones are always terrible to peel so for boiled eggs we use those that are a few days old and get better results
I always roll them along the draining board. The ridged surface cracks the shell in various places and then it's easier to peel off.
I watched my uncle take a hard boiled egg, lay it on the table and applied just the right amount of pressure on the egg to crack the shell as he rolled it front and back. Then he just scrape the egg shells off the surface of the egg.

The idea is that you want the whites and the yolk. What the shell looks like (eventually) is not important.

I won't recommend this on soft boiled eggs though.
run them under cold tap or have a bowl of cold water ready this contracts the egg away from the shell and should be no problem, be quick though we dont want cold eggs.
I also find the easiest way is too roll them along a surface to crack them then peel under cold running water to wash away any excess

if you forget how long they have been boiling, an easy way too see if they are hard boiled, is to take to egg out and spin it, like a coin, if it stands up on one end whilst spinning it is hard boiled, if it wobbles or won't stand up, its still needs a little longer, so pop it back in
