I bought a jar of what is normally rather expensive raw sauerkraut. Reduced because today was use-by date.
Who would go ahead and continue to use it several days after? I'm thinking of having some either tonight or tomorrow...but it will take more than 2 portions to finish it.

If it was sealed, no problem eating it. It is pickled I believe, which is a preserving process.

If it deteriorates it may spoil texture or flavour, but won't be dangerous.
I'm wrong. It's not pickled, it's fermented.
If it smells OK and looks then eat it
It's sauer to start with.
Could it get much worse?
