I exercise commonsense with food always, but I am curious about something. If I were to eat raw chicken - say M&S free-range - or pork - say ASDA organic pork fillet, what are my chances of food poisoning ? Possible, Probable, Certain ?

I don't do it of course, but what are the actual risks ?

raw pork gives you chichinotis Not the correct spelling I know but phonetically
Trichinosis - parasitic intestinal worm from eating raw / undercooked pork - very nasty - but not that common nowadays . You can have the symptoms within a day or so but can it can last for 6 months - runny bottoms are not fun for that long..........

Salmonella and campylobacter - two little darlings in the bacteria world you can meet if you eat raw poultry. Don't do it.
Sorry - and to answer, what are the risks? - avoid the risk by simply cooking the meat properly 'til juices run clear - eay to get right - no pink in the meat, clear juices and no blood present will make sure you avoid the probs..
I'd say 'Certain'. IMO, it would be a kind of cannibalistic thing to do.

Not to mention downright gross.
as a chef, i always cook me pork loin and fellet so it's pink, the problems associated with it are long gone, chicken is a different matter and should always be cooked thoroughly, you can get smoked chicken which is eaten raw though the smoking cures all nasty bacteria
So how come you can eat raw steak/beef? Why is that different?
the nasty bacteria that is on beef is only on the surface of the meat and does not penetrate it
