Not often that I get involved in 'food' threads, let alone start one.
BUT what meals (or strange concoctions) have you ever thrown together with left overs?
Got no cash until the weekend so knocking up meals with bits out of the fridge.
Tonight's tea (Dinner for the pedantic) consists of noodles, chicken, baked beans and tomatoes with a dash of hot pepper sauce.

Not exactly cordon bleu, but hey...its a meal!

Weetabix dipped in a mug of milk - don't go as soggy as in a bowl. And my all time favourite is picked onion sandwiches - with cherry tomatoes if I've got any. Often put pickled onions and tomatoes on plate waiting for tea to cook and end up eating them in a slice of bread before its ready.
Picked onions? Pickled!
Most of my food is not actually leftovers. When I buy meat I usually buy bigger than we need for lunches. Salad/veg etc is not what I would consider leftovers unless it's already been cooked.
Some of the menu items mentioned here make me shudder.

When I started work they thought I came from a poor
background, my favourite lunch most days was salad sandwiches.

Hardly a day passed with the questions - ham,chicken,cheese,tuna ?- No,just salad.
