I am planning a party for 60+ and want to freeze ahead as much as possible. Can anyone help me please. Can I freeze and when, the following
Cooked Choux pastry unfilled.
Cooked samosas or should I freeze before cooking.
Pizza dough part cooked dough or cooked with topping
Creame Pastissire
Savory muffins
Meringue shells
Cooked rice and pasta salads

choux cn be frozen cooked, provided you seal it in an airtight box/bag. samosas are best frozen uncooked. creme patisier doesnt freeze well if homemade, but the commercial ones are ok. Freezing meringue is unnecessary as the shells can be kept in a dry place like an airing cupboard for months, and filling them at the last minute ins the work of a moment. Cooked rice can be frozen but tends to clump unless you stir in some oil first. it should however be frozen the instant it is cooked and eaten the instant it is defrosted as it is a breeding ground for food poisoning. Pasta isnt easy to freeze, as itt loses texture. Fridge is a better bet.
you can freeze loads of stuff including lasagne and puddings!
