Which are the better ones to buy, wood, plastic or marble?

Marble is ideal for pastry work.

They'll be thrilled with that, well done.
We just remove all boards and make pastry on the worktop, it's a bigger area to work on. Don't think I'd actually use a proper pastry board.
I have a marble one and I love it. Also have plastic ones for meat etc. I bung that in the dishwasher. Irrelevant, I know.
