Can a professional tell me why with only 2 mins of a game remaining both the side winning or the side losing will kick the ball giving the other side one last chance to win or retain the ball to win

Because they have had a lobotomy in the past
not even an amateur, but maybe the aim would be for the kicker's own side to get to the ball first rather than the opposition. This has been known to fail, which is why sensible teams don't do it.

Either side kicks has long has possible when they only need to retain pocession for 2 mins
teams that are narrowly ahead don't usually kick it away at all; teams that are way ahead may do.

That is my point when teams are narrowly ahead they sometimes kick when they should never kick and in the Sat game France are losing 2 mins to go they kick and dont get the ball back
With 2mins to go if either side is "out of sight" then it matters not one jot if either side kick the ball into touch.
HOWEVER, if, with 2mins to go if the winning side kicks the ball into touch,then that gives the losing side the final play and the chance to score........so why would they do that?.....stupidity.
If the losing side kicks into touch then they have lost all hope of winning.

HOWEVER (again) if the captain of the winning side asks the referee,if kicking it out would signal the end of the game (the final play) and the ref confirms this...then kicking into touch wins the game.
remember England won the world cup with a last kick goal from johnny wilkinson !
