We had some new doors put in recently, we quite liked the colour of the wood so just put a watered down priming coat of non coloured varnish on them. I've now decided I'd like them to be stained a darker colour. Would it be ok just to give them a sand to get rid of the varnish and just start again?

Definitely, Rocky. You've already given them a good start.

Remember that varnish or stain can be stained or painted over. If you go for wax or oil, those won't be compatible with varnishes etc.
