Uht Skimmed Milk

I always buy cartons of skimmed milk....it tastes better to us in coffee and cocoa, hot chocolate etc, than "fresh" skimmed, which we find slightly watery.
We get through a fair amount of it, so when I noticed Sainsburys had a price hike not so long ago, I decided to check Aldi and Lidl prices. 49p a litre!! Sainsburys 65p!.
Have been buying it from Aldi or Lidl ever since, (and I'm reaching my point now!) but I've noticed a skin forming on it when heated (barf). Why should this happen when there's no fat? Sains uht skimmed never did this.

I thought all milk heated sufficiently formed skin: multiple skins if you remove them. And all skimmed milks were inevitably watery.

*Update*!! Have just drunk a mug of coffee made with half hot water + half hot Aldi milk. The last mouthful was a huge piece of skin....*heaves*
Shall go back to Sains milk + grin + bear the extra £3 summat. ;)
