There was mention on the radio this morning of a professors view that it's less harmful than frying with vegetable oils.

Oh Sandy, just the thought of lard makes my arteries slam shut.
sorry sandy. horrible taste.

When I was a child there was a frying pan sitting on the stove in our house with about a quarter inch of congealed lard in it. We'd use it to fry our food, including fried bread.
I don't think I could stomach that now.
For chips nothing beats beef dripping.
Lard can withstand higher temperatures without oxidising, hence crisper chips.

You can tell when cooking oil is partislly oxidised by the change of flavour. Baked on oil splashes are like glue and not even detergent will dissolve them.

I heard this morning on the BBC 7.00am News......Lard and Butter as being healthier than Vegetable Oils.

Next we'll hear that Researchers have had it all wrong about cigarettes.

I think it's time we had research into Researchers.

@Hypognosis.......No, I haven't seen 'Sleeper'. Perhaps I should research it!!

Incidentally, a classic bit of Research was in USA where experiments established conclusively that Tomatoes bruise more easily when dropped from greater heights........Now who would have thought that ??.☺☺☺

My mum had a big chip pan too sandy - with lard, my mum would probably not have considered the various oils as they were new/posh/whatever.

I never deep-fry and seldom fry anything - I have a very short concentration span and have been to wander off whilst cooking.

I can make toast though

I don't deep fry anymore, chip pan and fat fryer long gone - but do use dripping for roast potatoes.
I used to have a chip pan full of beef dripping ... it solidified around the chip basket when cold.

It made beautiful patterns as it melted around the wire basket as you heated it ... made the best chips too ... probably only available on the black market now :(
You can still buy beef dripping, and chip pans :)

I still enjoy dripping on toast on high days and holidays.
