if a friend and i wanted to change £300 each into euros would we be better of if we pooled our money and exchanged the £600 would be get a better deal? or would it be the same if say she exchanged her 300 and i exchanged mine?

i know that £ to$ at the post office offers a better rate for more than £500

Yep, better rate at the Post Office if you buy over £500 worth.
