If you are not a citizen of an EU country you don't. Are you really asking about EU entry requirements for Canadian passport holders?
As far as I know, there is no such thing as a EU passport. You may be eligible to apply for nationality of a member state of the EU. There are 25 member states now. You would need to check with the individual member states (their consulates) to see whether they are prepared to give you their nationality. For ex. (to take just one example) I believe if you had at least one Irish grandparent, you would be able to apply for nationality of the Republic of Ireland, being a EU member state. Unless, as Pinus writes, you are really asking about EU entry requirements for Canadian passport holders!
