From the Hong Kong International Airport Website:

Foreign Currency & Money Exchange
Q3: Just curious if I go shopping in the airport will I have to get Hong Kong currency or do they take USD? Do they accept credit cards?

A3: Please be informed that most of the retail and catering outlets accept major freely convertible foreign currencies, such as US$, Euro, RMB, etc. In addition, apart from Cafe de Coral (one of the 6 outlets in East Hall Level 7 Foodcourt), all retail and catering outlets inside the restricted area at Hong Kong SkyMart accept credit cards - VISA, Mastercard and American Express as payment. If you want to exchange foreign currency to Hong Kong Dollars, there are more than ten Travelex Worldwide Money outlets inside the Passenger Terminal Building for you to choose from.
