I used to work for Anglia Railways (as it was then) and frequently had to recommend routes to customers. While it's possible to go 'cross country' (via Birmingham) it makes far more sense, in terms of time, to go via London.

i.e. go from Norwich to Liverpool Street, then take the Hammersmith & City line to Paddington, where you can board a train to Swansea (either direct or with a change at Newport). Journey times are typically just over 6 hours:

If you'd rather avoid London it takes an hour and a half longer and probably costs more (though it depends if and how you split tickets). Only two changes - Nottingham and Cardiff normally.
