What's the best way to get from Perpignan in South France to Granada in Spain. Can't find any websites that show any train routes or flights.

it's not easy by rail. there's a train from barcelona weds, fri and sun leaving at 08h00 and arriving granada at 19h37, however you'd need to leave perpignan the night before. summer only leave perpignan 05h14, change portbou 06h14/07h17, barcelona 09h57/11h30, madrid 16h23/17h02 and arr granada 22h49. www.renfe.es lists perpignan under "other stations".
