Does anybody know if the one-year warranty that comes with ipods covers theft?

No it doesn't. A warranty is protection against a fault with the item, (ie they will repair or replace the item if it stops working) not if it stolen. It is effectively the manufacturer's promise to supply you with a working product for the first year you own that product
To cover for theft you need to have insurance. An ipod may be covered on household insurance, but that very much depends on the policy you have.
