Creating computer file of a scan - Mac OSX

I have an iMac computer USB-linked to an Epson scanner/printer. My operating system is Mac OSX Tiger. Can anyone please explain how to create a file of a scanned image so that it can be saved, e-mailed, etc?

Mac OSX Tiger has Image Capture. I open this program, preview and/or scan the object, and the scanned image appears on the screen. Fine so far, assuming I'm using the right approach. But this image doesn't automatically get saved anywhere as far as I can see.

Having explored all the tabs, etc, I cannot find a facility to save the image as a file or document. (I want to create jpeg files). The user's guide and Help facilities don't seem to help, either?

Did the printer/scanner come with software?
Have you tried that?

The printer/scanner came with software, yes, but it was for a Windows PC (which I don't have).

I know that what I want to do can be done, it's just a question of how.

Thanks for your help anyway.
Try the epson site. They have software there for most printers/scanners.
