my utubes vids etc would work recently , i kept getting messages saying install updates, yesterday i installed updates and now the whole phone theme has changed, i liked and preferred the old one.

how can it be changed ?

No idea.
My S4 was updated last week and it is like having a new phone.
I much prefer the updated version.
