Is it possible to take off the date on my digital photographs

Could you crop them so it doesn't appear?

yes, Open them on your software & either blend out the dates or copy surrounding pixels to paste over dates.

And then switch the date off on the camera to avoid seeing it on future photos.

Stored as jpegs on my laptop none of my photos show the date (from a DSLR and a vidcam). They never have either, it must be a setting on the camera.
