Unlocked Iphone 3GS Problem?

Hi Everyone.
Ive just had my iphone unlocked as ive changed network providers. Trouble is, you lose all your contacts and Apps when you do this. The man in the shop said not to update the phone or it will lock again. Just Sync it! However, when I plug my Iphone in to itunes, it asks me to either 'Set up As New Phone', or 'Restore From The Backup' of the old one. It wont let me just Sync. I tried to update yesterday by choosing 'Restore from The Backup', but It ended up locking my phone again and I had to take it back to the shop today. He had a go at me for it, saying I told you just to Sync it. However, im scared the other option left to me (IE. 'Set Up As New Phone' will also update my Phone and it will lock again. Please help!

Plug it into your PC and sync
It should have a back up with your email account for iTunes
Once it has been unlocked with your new sim in it shoul not lock again
I know as I have don the same
