Is there anyway of retrieving emails after they have been deleted from outlook? cheers

Unless you've got specialist forensic tools, probably not. However, some items sometimes lurk in your Inbox, or in Deleted Items, after you think you've deleted them.
Go to Start > Search and run a search for *.pst (That assumes that you do mean Outlook and not Outlook Express. In OE, search for *.dbx).
That should locate your Inbox and Deleted Items files. For each of them, right-click and select 'Open with'. Choose Notepad. You can now view the full content of those files. Use Edit > Find to search for key words from the e-mail you're looking for.
As I've indicated, the chances of success are slim but I once retrieved a phone number and other details, from a deleted e-mail, by that technique.
