How can I invert a selection in windows?

I'm not using excel or any common windows application, I'm just looking for things to try - probably keyboard shortcuts.

Ctrl + clicking selects the cells I don't want; I'm looking for a shortcut to select the cells I do want in one step if possible.

I think that you might have to use 2 steps:
Alt+e to open 'Edit', then i to invert the selection.

Chris is right. There is no hot key combination for "Invert selection", so you need to access the edit menu, and choose it from there
