Moor fowl is another name for a grouse. I think it is more often called Moor C**k.

I have never heard of the other two I'm afraid.
Sea pie== Oyster Catcher

A sea pie is an oyster catcher.It's black and white , pie [ 'pie' is an old word for magpie and has come to mean simply 'black and white' like a magpie ] So it's the black and white bird by the sea.

Frank is a dialect word for a heron. Good one, when it calls it does seem to be calling " Frank !".
