spanish holiday cottage

Can anyone advice a cottage holliday in spain/france/italy etc?? My wife and I are at that age where we have done everything! Well almost!! Anyway to cut to the chase we are looking for a little off the beaten track cottage/villa with a pool. Its got to be private.
We love walking, wildlife, and eating with the locals.
Any help would be a great help.
