why do cows and rabbitts not have a problem with digestion of fibre?

Probably because they digest it several times. Cows are famous for having 'four stomaches' and rabbits routinely eat their own faeces in order to digest their food twice. Most grazing animals have similar ways of aiding the digestion of fibre, which is why they spend so long eating - it takes a long time for them to get any nutrition out of it.
