How did elevator communication used to work?

I understand the power behind the older elevators (manual, steam, hydraulics etc) but I wondered how was it communicated to the power source what floor was required?

Any ideas?

Didn't there used to be a man standing in the lift who asked, "what floor Sir?"

Yes indeed there did but I don't think he was the power source
