The earliest-recorded use of the phrase - in the form of 'hit the trail' - was in a book called 'Wild North Land' by W F Butler published in 1873.
Similar phrases include 'hit the hay' meaning 'go to bed', on the basis that mattresses used to be filled with straw. There are also things like 'hit the town, 'hit the bottle' and so on.
