You can freeze it and use it straight from the freezer.

That's what I do, I've got little bags of chopped galagal, lemon grass and kaffir lime leaves in the freezer ready to chuch straight in soups and curries.

I freeze ginger and it is always good, I don't see why galangal cannot be frozen.
