What Is 'other' In Itunes Lists Of Contents On Ipad & How Do I Remove Defunct Apps From My Itunes?

When I connect up my iPad to iTunes the bar across the bottom indicates how many Photos, Audio and Others I have. I seem to have a lot of 'Others' ~ what are they and how can I thin them out? Also on my Apps in iTunes I have a lot of Apps I loaded in haste and now want to remove from my computer. H
