Where on earth does this phrase come from? I've heard it used to describe 70s funky disco and 50s horror B-movies, usually in quotes as if it was an actual quotation. If it is, who said it?

Is it from Wallace and Gromit? The one about the trip to the moon?

Good idea, BHB, but apparently not. For obvious reasons they are mentioned on various cheese sites (can't you tell I've been Googling and am now fed up of cheese sites!) but not in connection with the quotation.
Found it! (I think). It appears to be a (particularly bad) advertising slogan used in the U.S. that has been appropriated as a humorous reference to "cheesy" movies. See this site http://www.modernguy.com/mt/archives/000011.html for details. BTW, it's amazing how many hits a search on "Behold the Power of Cheese" turns up! If you go to the "I love cheese" site mentioned on that page, you can download "power of cheese" ads.

Thanks, LeMarchand! Yes, loads of hits turn up... lots about cheese, and lots that use it as a quote without actually mentioning where it came from - thanks for the info! (I'm a tad disappointed that it's an ad slogan though - had hoped it came from "Cheese from Outer Space" or "Attack of the Alien Cheese"...) :-)
