what is the correct saying ' the proof is in the pudding' or 'the proof of the mix is in the pudding'

The earliest-recorded version of this proverb is: "The proof of th' pudding's seen i' th' eating". That appeared in 1682.
I should have added to the above that the modern version is simply: "The proof of the pudding is in the eating." In other words, you don't know how good something is until you've tried it, by eating or whatever else is appropriate.
