Rye bread is pretty decent, stick some low fat cream cheese on top along with some sliced peppers or use Oat cakes with the same topping.
I actually quite like the John West tuna light lunches, very handy.
Or some smoked/peppered mackerel with sliced red peppers and sweetcorn.
Pasta salad is delish, you could use wholemeal pasta, and add some lovely raw veg and chicken or tuna to it, with a low fat dressing.

Mixed bean salad with cous cous?

I munch my way through home made chunky coleslaw (white cabbage, celery and carrots) with a little mayonnaise and some seedy mustard. I add other things now and again, eg. red or green pepper, sweet corn, chopped walnuts, raisins, sugar snap peas. Be inventive. You really feel as though you've eaten something - it takes time to chew and it's filling too, healthy and low in calories (depending on what you add!). I'm addicted.
Kriskwery - the next time you make that coleslaw you love - try grating some onion in it and sprinkling in some cumin - I love it that way!!!
