Yes, very much depends on the job, no one tells the whole truth at Interviews anyway.

I travelled to......by....... eg a coast to coast trip across the US

I think it’s supposed to be an ice-breaker but it just puts you in the spot . :/ and I’m not sure if I can repeat or do I need to think up something new this time...

Dint worry about the word exciting. Just assume they mean interestinga nd you'll nail it.
Have you travelled anywhere interesting?
Have you won an award?
Have you raised money for something?
Overcome a fear?
Have an interesting hobby? (Careful with that one as it would need to be a bit unusual)
Met a famous person?
Led a successful project?
Learned a language?

Hmmm it’s a hard one . Last time I told them about how me and my fiancé gave ourselves 12 weeks to plan a wedding . And we did it . :)

Its interesting that they're seeing you for a third round of interviews; they must be very interested but just not quite sure of something.

Is it the same interviewer? If so I'd be tempted to say I told you the most interesting thing last time. Other than that I'm actually quite a boring, hard working family woman or words to that effect

I ended up repeating what I said in last interview about planning wedding in matter of weeks . Out of the 3 people in the interview only one of them I’d seen before . I had a much better vibe this time during interview . The interview I went to earlier in the year was awful . Nerves got the better of me .but much better this time and they ‘ve offered me the job .
