Do french dubbers of hollywood films use the same french actors for certain hollywood stars from film to film? For example Is there a frenchman out there who specializes in Brad Pitts voice in every movie he does?

Often. The most well--known is probably the chap who dubs Peter Falk whose name I can't remember! Some sites devoted to the 'dubbers'  that you may care to browse (they"re in French, surprise, surprise!):

Arnold Schwarzenegger's films are dubbed into German by someone else, as apparently Arnie's rural Austrian accented German makes him sound like a country bumpkin in Germany itself

Jodie Foster dubs herself into French as does Kristin Scott Thomas, Rupert Everett does most of the time. The reason there is so much dubbing in France is because your general French public will not go and see a film subtitled - crikey! Do you realise they would have to read a subtitle and films are for entertainment!!!!!!!!
