Last year I told the local animal charity that I would make some jam for them to sell at their summer fete. They have just taken me up on the offer and the fete is in mid May which is earlier than I expected. What would be a good fruit to buy now?

Not much soft fruit around yet....could you try making some chutney instead ?

I have made some lemon marmalade in the past, and you can always make other marmalade's that don't rely on Seville Oranges. I used to have a recipe for Grapefruit Marmalade, which was really tangy, but I lost it years ago.
Rhubarb and ginger springs to mind.
Good idea Eccles !
Rhubarb and ginger is lovely, don't over cook it, I put some stem ginger in there too with the syrup. If you ask around you'll probably get rhubarb free at the moment, ours grows like triffids.
Another thought, lemon curd is wonderful too and so easy to make.

Thanks. I must admit, rhubarb and ginger doesn't really appeal but then, it's not me that will be buying it. I imagined making jam from lovely fruit later in the summer. My fig chutney turns out well but I`m not sure it's the best time for figs either.
Yes, I agree with lemon curd.
Haven't had lemon curd since I was a boy ! My brother and I used to love it so much....might get a jar in the morning !
I am a big fan of Rhubarb so it's Rhubarb from me;-) I make rhubarb cake occasionally, delicious.
Yes, rhubarb on its own, but not with ginger, for me anyway ...
Me too. I prefer it without the ginger. I do like ginger though ...
We had rhubarb growing in our garden in the 60's, that was worse than triffids !

Mum used to stew it with lemon quarters and some ginger. Any left over we used to put on to slices of bread, to make very runny sandwiches with !
Mmm lemon curd (or lemon cheese as we used to call it), not had that in ages. May get some when shopping tomorrow and have it on toast (yum).

Doesn't lemon curd need to be refridgerated? I'm not sure it would be OK for it to sit at ambient temperature on a fete stall for too long.
lb - I like ginger biscuits !
I don't know if it has to be refrigerated or not, sorry. But we had it when we were kids and doubt it was refrigerated then as I'm going back a bit !
I must admit I never put my lemon curd in the fridge but I believe you have to keep lemon cheese in the fridge.
Question Author
It's just that I was looking at a recipe for it and it said to keep refridgerated. I was hoping to make a jam that I have made before such as apricot, blueberry or strawberry and I have been caught a bit offguard by the email saying that they have a fete coming up soon. I'm a bit reluctant to make something that I haven't made before but rhubarb does make sense. I would do one batch with ginger and one without.
Islay - I thought lemon curd and lemon cheese were one and the same?
