I think it's the Suzuki Turbo Hayabusa.

I would think the fastest production road bike, as opposed to one off specials like the above, must be the new Kawasaki ZZR1400 which has an estimated top speed of 186 mph, just beating a standard Hyabusa at 181 mph.

Hayabusa used to be now as above the ZZR1400
