A short and sweet question: why do the release dates of DVD's sometimes change?

Do you mean why does it take some Films longer to come from the cinema to DVD than others?

If so it is usually because of financial reasons. If a film is still taking good money at the cinema it's release to DVD will be held off to maximize profit.
All sorts of reasons including: production problems, certification problems, and the fact that something else is due out at the same time that may eclipse it's publicity!
It is the same for cds, videos, dvds and especially games
