Legolas says that one bite of lembas bread is enough to fill the stomach of a grown man.

However when Sam and frodo are on their way to mount doom they eat whole slices of it then complain they are running out of food?! Surely the whole point of it is that it lasts for ages because you only need one bite? Silly hobbits

Silly writer/s. sorry don't know if this is part of the original book but sounds like a mistake Mr T wouldn't have made.

Pippin: We've had one, yes. What about second breakfast?
Merry: I don't think he knows about second breakfast, Pip.
Pippin: What about elevenses? Luncheon? Afternoon tea? Dinner? Supper? He knows about them, doesn't he?
Merry: I wouldn't count on it.
As Erin-x points out, hobbits have a voracious appetite. Don't they have 6-8 set mealtimes per day? This would probably explain their consumption of the bread.
It also explains why Bilbo has enough food in his larder to feed all the dwarves that descend on his abode at the start of The Hobbit.
Also being a bit fey the elves probably think a bite of bread is plenty... sort of like designer chefs thinking a teaspoon of truffle mash and two mange tout is a meal
