We've had a roof conversion, but not installed fire doors yet.

For this reason we have not had final Building Control sign off from local authority. Does this invalidate our buildings and contents insurances? Also, general question, if a domestic property has fire doors fitted, and subsequently a fire destroys the house, and the fire doors were not closed, will the insurance company pay out?

It probably does invalidate the insurance and once those fire doors are fitted you must keep them shut, especially when you're out and when you're asleep. Get door closures fixed on them and you'll find it easier to stick to it.
I agree with maidup - and if you haven't had signoff, you'll find it difficult to sell when you need to. My neighbours had this problem, they had to get it fixed before the agents would look at it.
