it's when the thermostat thingy autiomatically tells the condenser thingy to swithc off as it has reached the optimum running temp
The pump will be mounted through rubber dampers that are designed to stop the banging. It's very possible that they've perished or just fallen out.

before putting your victims in the freezer, it's best to ensure that they are definitely dead (saves embarrassment all round)
Cause you keep hitting it
the reason the fridge is banging is the contraction of the evaporator dish at the back of it. It will not cause any harm to the fridge system. This is the only reason for the banging, the thermostat is electronic and does not bang when it is switched off. Believe me thats what is causing it - see it every week
