We keep ours in the fridge wrapped up in paper, not too sure if that is what you are supposed to do with it, but it seems to work, it lasts for ages!!

The best way to keep it is to freeze it, freeze in the size quanties you will need.

Personally I think the best place for it is with the dirty socks, where its is unlikely to cause any more offence.

You can grate straight from frozen with no adverse effects.

It will keep for weeks in the fridge wrapped loosely in a plastic bag. It also stores well in a plastic container. We usually keep some ready grated in a plastic box so it's handy to sprinkle on things and it also stores well in this form.
