They aren't. New York ones are - and for the same reason London ones are black - to standardise them and make them recognisable.

Yellow Cab is the name of one cab company which of course uses only yellow cabs. They are found in various cities about the USA. There are many many cab companies in cities all over the USA with various names and color combinations.
