I heared that this dates from times when barbers did other jobs including a shave. i.e. pulling teeth and minor(!) ops. The pole then would have been given to chomp on and the red strip is the blood. Anyone else?

Yes the pole indicated that a barber could do surgery. This is why surgeons are called Mr/Mrs/Ms & don't use their clinical title of Doctor, as traditionaly you didn't have to be a doctor to do surgery.
