Pistachio Cake/buns

I've got a load (about 400 grams, 14.1 oZ) of pistachio's and want to bake with them. They are unsalted and 10 years old so lack a lot of flavour.

I'm not willing to throw them out but have never tested any pistachio recipe. Any ideas?

I've had some excellent pistacchio ice cream, but if the nuts are 10 years old, the result could be a bit bland.

I'd grind them fine and use them like ground almonds in biscuits or cakes.

venator: I forgot to mention in the post that I'm not a huge fan of almonds. I love every nut apart from almonds and coconut (yes I know it isn't a nut but just in case someone says it!)

I'm not confident in making ice cream and I know that the flavour, as you suggested due to the age of them, would be far too bland. It's a shame because I love pistachio ice cream.
They don't sound very promising Dizzy ! Why not give the birds a treat ?

Mikey: I just don't think I can do that, we feed the birds muesli and red skinned peanuts.

I think I'll just sit and eat them on their own and bake something else. I've got a load of parkin that needs making so I suppose I will just snack on them whilst doing that.

10 year old nuts ?????/ bin them .

anneasquith: They are vacuum packed (or at least they were until I started nibbling at them yesterday). There is nothing wrong with them, they just don't hold a lot of flavour - I don't think that is entirely down to age though.

They aren't tasteless, they just don't have the strong flavour of 'off the shelf' salted pistachios. They were bought vacuum packed years ago from a supplier who now also supplies for Gordon Ramsay. I might not be able to cook/bake with them but I'm certainly not binning them - I hate waste.

The flavour of the pistachios may not be there but I'll give a full review of the consistency and overall flavour.
