i always microwave salmon steaks, can't go wrong. put two in a dish with a lid. add a good splash of white wine, a slug of lemon juice, a sprinkle of mixed herbs and a little salt and pepper. microwave on high for 2 minutes. let it stand for a couple of minutes (or longer if you're busy doing something else) then microwave again for another couple of minutes. let it stand again, just for a minute, and serve it with hollandaise sauce (a good quality one out of a jar, saves time). serve it with new potatoes and green veg. dead easy and delicious.

A gorgeous accompaniment to salmon is salsa. I use the doritos mild dip one. Just heat it before serving, with new tatties and veg it's ace!!

Salmon in Dill Sauce

2 lb Salmon Steaks
1 Salt and pepper
1 T Butter
1 c Sour cream
1/2 t Dill

Melt 1 tbsp. butter in skillet at 250F degrees.

Cook salmon 10 minutes per inch of thickness.
Turn twice, salt and pepper to taste.
When salmon is done remove to hot platter.
Put sourcream and dill in skillet and turn heat off.
Sour cream should be warm after a few minutes.

Pour over salmon and serve with new potatoes, green beans and fruit salad.
