Low fat potatoes ?

I have to cut my fat intake (doctors orders) any ideas what I can do with potatoes other than roast or mash with butter. Plain boiled are fine with a gravy dinner but a bit uninteresting otherwise.

Cut them into 1 or 2 inch pieces (just large pieces of a size you like) - put in a pan and drizzle them with a little bit of olive oil and sprinkle with whatever herbs you like and roast them. Or do the same thing only use a bottle of low fat Italian Salad Dressing to coat them before roasting. I like leaving the skins on mine when I do them either way - I just wash and dry them before cutting them up.
Slices of potato and onion in a casserole dish cover with oxo gravy put a lid on or tin foil and bake in oven about 45mins. Chips..............cut your chips,par boil for 5mins,drain well put on baking tray. Spray with one of those 1 calorie aerosol oils and bake in oven till brown.Grate potato and an onion (squeeze as much water out of the potato as you can, I sometimes use a t towel) mix the onion, potato,salt and pepper form into flat cakes,a spray of oil in a frying pan cook till brown.................... I think the spray I am on about is called Frylite.
Thick slice potatoes, onions, green peppers and celery and place on a fairly large sheet of aluminum foil. Salt lightly, pepper, two bay leaves and just a little EVO. Fold foil tightlly and bake at 350 degrees for about an hour. We also do the same thing on the grill, turning about every 10 minutes....
Baked potatoes are great as well, low fat fillings, cottage cheese, tuna, philadelphia the list is endless. Potatoes only get fattening with what we put on them even though all that butter does make them ever so tasty !
What about pasta or rice instead of spuds?...
I make potato wedges with Maris Piper, Desiree or King Edwards are the best. Peel and cut the potatoes into wedges or chips. Dust the potatoes all over with flour quickly in a bowl. It has to be done just before you put it in the oven otherwise the flour goes all doughy. Put the tray of potatoes in the oven for around 45 mins, at 400F. Note: This recipe uses absolutely no fat. The potatoes will be lovely and crispy on the outside.
Why not try sweet potatoes for a change. They are supposed to be healthier than normal potatoes. Hope you enjoy!
Layer very thinkly sliced potatoes and onion in an dish, seasoning between layers with salt, pepper and thyme or another herb you like. Pour over a mixture of stock and milk to about 0.5cm below the top and bake for an hour until tender in the middle and crispy on top! Yum!
I part boil my potates and dry roast them putting a little salt over them. They take a bit longer than roast which has fat in with them but they taste good.
