Any reason why I can't add a splash or two of whisky to the tea when making this sort of loaf/cake?
You soak the fruit in hot tea overnight before adding to the rest of the ingredients and baking. What do think?

Fairy nuff - with butter and a bit of cheese on the side?
Yes please, Lurpak.
I'll save the cheese for later

Ah Welsh cake. Happy dreams. I had the family bakestone for many years until recently. At least 100 years old.
I would prefer a glug or two of pussers rum to infuse the fruit personally.
Question Author
I put rum in next weeks, retro
Have you ever made an all bran cake, Barry? Worth a go given your family like that sort of thing, and very easy.
Question Author
I haven't, Vagus - tell me more. Made with the cereal?

You could try a fragrant tea, like Earl Grey or jasmine.
Yep, all bran, sugar and dried fruit soaked in milk (or anything you fancy) for an hour, add flour and bake. The recipe(s) are online, I’m a duffer and can’t do links on my iPad :(
Question Author
Vagus, is this like the recipe you use?

drm, I do have earl gray tea but prefer a good old fashioned strong tea for baking.
It’s similar Barry, but I use the one Kellogg’s have on their website. And I always add more fruit of whatever sort I have in, usually dried cranberries.
Question Author
Ta, dried cranberries are lovely. I can't add dried peel to any recipe because my oldsters don't like it so often chuck in a few dried cranberries.
Well there you go then, definitely worth a go :)
I haven’t made it for quite a while but from memory I used to double the quantities and freeze one. Mind you, it’s so quick and easy to throw together and shove one in the oven while you’re cooking something else.
Question Author
I usually do make two and freeze one, I like to make my life as easy as possible.
Since it's a Welsh product, maybe use Penderyn whisky ?
:-)
Question Author
I am not wasting quality whisky in baking, OG, Aldi blended is good enough. Have some sense, man. :D
Worth a listen, I think, (for a rum version), Barry:
