Roasting Bags

I have become addicted to the above as they give amazing resulted for slow cooking meats. I want to make a chicken and ham pie filling ..... can I do this (chicken, gammon chunks, seasoning and cream) in a roasting bag and then combine with mushrooms in a pan to thicken? Any reason cream can't go in a roastig bag as the tenderising liquor?

I'm not sure you can slow cook cream, I tried it once in a slow cooker and the results were awful, the cream curdled. not nice.
